Start eggs in cold or boiling water?

Both work — but the boiling start is the repeatable one. Lowering eggs into water at a rolling boil means the start temperature is identical every time, so 5:00, 7:00 and 10:00 mean the same thing in every kitchen. Cold-start results depend on your pot, water volume and hob power.

The two methods

There are two honest ways to boil an egg. Boiling start: bring the water to a rolling boil first, lower the eggs in with a spoon, and start the timer — 5:00 soft, 7:00 medium, 10:00 hard for a fridge-cold size-M egg. Cold start: put the eggs in cold water, bring everything to a boil together, and count from somewhere along the way.

Both produce good eggs in the right hands. The difference isn't quality — it's predictability, and it comes down to what the clock is actually measuring.

What the cold start does well

Cold-start fans have real arguments. The egg warms up gradually with the water, which is gentler — there's no thermal jolt as a fridge-cold egg meets boiling water, and some cooks find cold-started eggs crack less often because of it. Some also swear the shells peel more easily, though experiences differ and the evidence is mixed. And there's a comfort factor: no lowering eggs into a roiling pot.

If that's the method your grandmother used and it works in your kitchen, nothing on this page says to stop. The catch appears only when you try to write the time down.

Why cold-start timing falls apart

A cold start has no fixed zero. How long the water takes to reach a boil depends on the pot's material and width, how much water you used, how cold it came out of the tap, and how much power your hob delivers. Change any one of these — a different pan, an extra cup of water, a friend's kitchen — and "ten minutes from cold" produces a different egg.

The boiling start removes every one of those variables. Water at a gentle rolling boil is at the same temperature today, tomorrow and in any pot, so the moment the egg goes in is a true zero point. The only things left that shift the time are the egg itself — its size and whether it came from the fridge — and both follow simple rules of thumb. That's why every serious timing chart, and every egg timer, counts from boiling water.

If you prefer the cold start

You can make a cold start repeatable — you just have to do the standardising yourself. Use the same pot, the same measured amount of water, the same hob setting and the same number of eggs every time; run one test batch and note the total time that gives you the egg you like. As long as nothing changes, your number will hold. Change kitchens, and you start over.
